To help both current and future residents understand what this revolutionary program truly looks like day to day, we spoke with the Restaura Vice President of Dining Operations, Lance Sanson, who brought his passion and knowledge to the table.

1. What is Restaura and how does it work?

Restaura is a hospitality and dining company dedicated to creating senior living dining experiences that residents genuinely look forward to while supporting their health and quality of life. The culinary team here prepares meals from scratch whenever possible, using high-quality, flavorful ingredients so residents can enjoy fresh meals made daily. AI technology is being used to help the team better understand resident preferences, so meals are tailored to their needs and palettes.

At its core, it’s all about intention and attention to detail. “Our mission is to be the best that there is in senior living and our focus is on healthy high-level food made from scratch,” Lance explains. Residents can also expect transparency around things like ingredients, calories, and sodium, so they know what they’re eating and can make choices that work for them.

2. How is Restaura different than traditional senior living dining?

Health and wellness are central to Restaura’s unique approach, and so is their focus on creating dining experiences that are interactive and support residents’ social dimension of wellness. “We are your advocate for having a great dining experience,” Lance says. “We want you coming to the dining venues all the time so you can socialize and enjoy life.”

Instead of relying on processed or pre-made items, Restaura prioritizes chef-prepared meals that feel more like restaurant-style dining.

Menus are built with flexibility in mind, and accommodations for allergies, gluten sensitivities, and other specific dietary needs are catered to and managed. Residents have a variety of options to choose from, and if something doesn’t taste right or they want something different, the culinary team is happy to adjust or prepare another option.

3. Where do all the ingredients come from?

Restaura focuses on local, responsibly sourced ingredients, and partners with farms across Texas whenever possible. “We try to buy as locally as we can,” Lance says.

The team also considers the quality of each ingredient and how it’s sourced. For example, they prioritize options like wild-caught fish and humanely raised animals.

“We know that wild-caught salmon is more nutrient-dense than farm-raised, and we look at that as well. We try to get the best quality products that we can,” he explains.

That commitment extends across the entire menu—from fresh fruits and vegetables to proteins like beef, chicken, and seafood. Every ingredient is selected not just for quality, but for how it’s grown or raised.

Looking ahead, Restaura plans to highlight where key ingredients come from—sometimes even naming the specific farm—so residents can feel more connected to their meals and confident in what they’re eating.

4. What types of menu options are available?

Local sourcing helps guide what’s available on the menus, but the focus is on choice and flexibility across all meals. A typical day can include:

  • Static menu options. These are core dishes that remain on regular rotation, so residents have dependable favorites they can count on. “Our goal is to make some of these the most popular dishes that residents enjoy,” Lance explains.
  • Daily specials. Each day features multiple rotating entrée options—often including a vegetarian or vegan choice—that includes new flavors and seasonal ingredients.
  • Personal requests. If you’re not in the mood for what’s featured or available, you can make personal requests to the culinary team. “If there’s anything that you like, want, or dislike—communicate it,” Lance shares. “Your voice will be heard here. We are all about hospitality and crafting experiences specific to each individual.”
  • Interactive dining experiences. Restaura will continue to add more interactive dining options that bring the food and chefs closer to residents. “We’re looking at adding things like a fresh catch of the week as well as carving stations,” Lance adds. These special experiences, and even special holidays meals, will allow residents to see how their food is prepared while engaging with the culinary team.

5. Is technology involved? How does it work?

Technology plays a big role in customizing dining experiences, and it starts with getting to know each resident. Residents can share their preferences, allergies, and dining habits either by filling out paper comment cards on campus and placing them in drop boxes or by completing a simple online form.

Once received, this information is used to build individual profiles that staff can access when a resident comes in to dine. Meals can then be adjusted in real time—whether that means modifying a dish, removing an ingredient, or providing staff recommendations based on their preferences.

Behind the scenes, AI helps bring this information together in one place, using dining patterns and feedback to continuously refine menus and improve service. Over time, the system learns more about residents’ expectations and finds different ways to meet them.

6. How does Restaura respond to resident feedback?

Resident feedback is one of the most important parts of the program. “We track your stomachs,” Lance says with a smile, which means the team pays attention to comment cards, online feedback, and what residents are ordering to understand what’s working.

That information is reviewed regularly and is used to make real adjustments to menus and the overall dining experience. Lance emphasizes that residents should feel like they have a say in what’s being served, which is why communication is so important and encouraged.

To keep conversations going, he hosts a biweekly Coffee Chat with Lance at Blue Skies where residents can stop by, enjoy coffee and donuts, ask questions, and share feedback in person. “We can never be stagnant and think we’ve made it,” Lance says. “We always have to be challenging ourselves to keep doing better.”
